Eggplant Casserole
Simple Southern-style baked eggplant casserole with Ro-Tel tomatoes, corn and cheddar cheese. Just mix and bake for an easy vegetarian side or main.

- 1 medium eggplant
- 1 medium onion
- 2 large eggs
- 10 oz Ro-Tel diced tomatoes with green chiles
- 1 cup soda cracker crumbs
- 15 oz canned whole corn, drained
- 0 pinch of salt
- 0 pinch of sugar
- 1 cup grated cheddar cheese
Instructions

Peel, cube and boil eggplant in salt water for 15 minutes; drain.

Mix all ingredients together in a large bowl.

Pour into a greased baking dish.

Bake at 350°F for 1½ hours.
