Easy Enchilada Casserole
Layered corn tortilla enchilada casserole with seasoned ground beef, corn, green chiles, olives and enchilada sauce, finished with plenty of shredded cheese.

- 8 each corn tortillas (8-12)
- 1 lb ground beef or ground turkey
- 0 cilantro to taste
- 0 chopped onion to taste
- 15 oz canned corn, drained
- 4 oz diced green chiles
- 0 black olives to taste
- 28 oz large can enchilada sauce
- 0 shredded cheese to taste

Preheat oven to 325°F. Grease a 10x8-inch baking dish.

Put 4-6 tortilla shells in the bottom of the dish.

Brown the meat with cilantro and onion. Stir in corn, diced green chiles and olives.

Put a layer of meat mixture on the tortillas. Pour some enchilada sauce over the meat. Sprinkle cheese over all.

Lay down more tortillas and repeat layers, ending with cheese.

Bake uncovered for 35 minutes.
