Duck Confit Risotto

- 8 oz Duck confit
- 2 cup Arborio rice
- 4 cup Chicken stock
- 1 cup Dry white wine
- 1 onion Diced
- 3 clove Garlic
- 4 tbsp Butter
- 1 cup Grated Parmesan
- 1 tbsp Olive oil
- 1 tsp Thyme
Instructions

Heat stock in a saucepan and keep warm.

Heat olive oil in a large pan and saute onion until soft.

Add garlic and toast briefly.

Stir in rice and toast for 2 minutes.

Add wine and stir until absorbed.

Add stock one ladle at a time, stirring frequently.

Continue adding stock until rice is tender and creamy.

Shred duck confit meat.

Stir in butter, Parmesan, and duck confit.

Season with thyme, salt, and pepper.
