Dried Cherry Chocolate Biscotti

Twice-baked Italian cookies with cherries and chocolate.

  • 2 cup All-purpose flour
  • 1 0.5 tsp Baking powder
  • 0.5 tsp Salt
  • 0.8 cup Sugar
  • 3 each Eggs
  • 1 tsp Vanilla extract
  • 1 cup Dried cherries
  • 6 oz Chocolate chips
  • 0.5 cup Sliced almonds

Instructions

    Preheat oven to 350 degrees F.

    Whisk flour, baking powder, and salt.

    In another bowl, whisk eggs with sugar until pale.

    Add vanilla to egg mixture.

    Fold in flour mixture.

    Fold in cherries, chocolate chips, and almonds.

    Form dough into two 12-inch logs on baking sheet.

    Bake 30 minutes until golden.

    Cool for 15 minutes.

    Slice diagonally into 1-inch thick biscotti.

    Place cut-side down on baking sheet.

    Bake another 10-15 minutes until crispy.
