Dreamsicle Mousse

  • 1 tbsp (15 ml) cold water
  • 1 tsp powdered gelatin
  • 2 tbsp (30 ml) boiling water
  • 2 oz (57 g) cream cheese, room temperature
  • ¼ tsp vanilla extract
  • 1 tsp orange zest
  • ½ cup (120 ml) heavy cream
  • 20 drops liquid stevia

    In a small bowl, whisk together the cold water and gelatin. Let it sit for 2 to 3 minutes to allow the gelatin to bloom.

    Then, whisk in the boiling water (you can boil more water for safety and measure out the amount you need). Set the gelatin aside for later.

    In a stand mixer with a paddle attachment, whip the cream cheese until it is soft, fluffy and lump free. Mix in the vanilla and orange zest.

    Transfer the cream cheese into a bowl for later and wipe your mixing bowl clean. With a whip attachment, whip the heavy cream and stevia together until you have a stiff whipped cream.

    Then, with the machine running, whip the gelatin mixture into the whipped cream.

    Use a spatula to mix the whipped cream into the cream cheese by hand. Fold the mixture over and over gently until you have a consistent mousse (the only lumps should be the bits of orange zest).

    Immediately transfer the mousse to four 5-ounce (150-ml) ramekins or small cups. You can simply spoon the mousse into the cups or use a piping bag for a more creative look.

    Wrap the dishes in plastic wrap and set in the refrigerator for at least 1 hour before enjoying.
