Fish fillets simmered in Rotel tomatoes — impossibly simple and packed with flavor.

- 2 fillets orange roughy, snapper, or any white fish
- 10 oz Rotel tomatoes with green chiles (1 can)

Put both fillets into a skillet. Cover with Rotel tomatoes, juice and all.

Let sit for 5 minutes so juice permeates fish.

Cover skillet. Cook on medium-low for 10 minutes. Serve without juices.
