Dinner in a Dish
Hearty ground beef and vegetable stew topped with mounds of egg-enriched mashed potatoes. A complete one-dish dinner that feeds a crowd.

- 2 lb ground beef or turkey
- 1 medium onion, chopped
- 29 oz diced tomatoes, undrained (two 14.5-oz cans)
- 3 cup frozen peas
- 0.7 cup catsup
- 0.3 cup chopped fresh parsley
- 2 tbsp all-purpose flour
- 2 tsp beef bouillon granules
- 2 tsp dried marjoram
- 1 tsp salt
- 0.5 tsp pepper
- 6 cup hot mashed potatoes (prepared with milk and butter)
- 2 large eggs

In a saucepan over medium heat, brown the beef and onion; drain.

Add diced tomatoes, peas, catsup, parsley, flour, bouillon, marjoram, salt and pepper; mix well. Bring to a boil; cook and stir for 2 minutes.

Pour into an ungreased shallow 3-quart baking dish.

Combine mashed potatoes and eggs; mix well. Drop by 1/2 cupsful onto beef mixture.

Bake uncovered at 350°F for 35-40 minutes or until bubbly and potatoes are lightly browned.
