Deviled Crab

- 2 count large eggs, well beaten
- 1 can (5.5 oz) evaporated milk
- 2 tbsp butter, softened
- 4 count scallions with tops, chopped
- 1 tbsp Worcestershire sauce
- 1 tsp dry mustard
- 0.5 tsp salt
- 1 lb fresh crabmeat, picked over
- 0.5 cup cracker crumbs, divided
- 1 tsp paprika

Preheat oven to 400°F (205°C). Grease 4 ramekins or individual crab shells.

Beat together eggs, evaporated milk, butter, scallions, Worcestershire, dry mustard, and salt.

Gently fold in crabmeat, mixing carefully to preserve lumps.

Add just enough cracker crumbs to hold the mixture together; stir gently.

Spoon into prepared ramekins or crab shells. Sprinkle tops lightly with remaining cracker crumbs and paprika.

Bake for 20 minutes until lightly browned and set. Serve immediately.
