Deep Dish Apple Pie

A classic deep dish apple pie with Granny Smith and McIntosh apples, cinnamon, pecans, and a surprise cheddar cheese layer, served with vanilla ice cream.

  • 3 tbsp butter
  • 2 lb Granny Smith apples, sliced
  • 2 lb McIntosh apples, sliced
  • 0.5 cup sugar
  • 0.5 cup light brown sugar
  • 0 juice of one lemon
  • 2 tbsp flour
  • 1 pinch nutmeg
  • 1 tsp cinnamon
  • 1 cup pecan pieces
  • 4 oz Wisconsin sharp cheddar cheese, grated
  • 2 cup all-purpose flour for pie dough
  • 0.8 cup solid vegetable shortening
  • 3 tbsp ice water
  • 8 scoops vanilla bean ice cream

Instructions

    Make pie dough: Combine flour and salt. Cut in shortening until crumbly. Add ice water and mix until dough just comes together. Divide in half, flatten to discs and chill 30 minutes.

    Preheat oven to 350 degrees. In a large saute pan, melt the butter. Add the apples and saute for 2 minutes.

    Add the sugars, lemon juice, flour, nutmeg and cinnamon. Cook for 3-4 minutes until the apples are just tender. Stir in the pecans. Remove from heat and cool.

    Roll out one dough disc and line a deep dish pie pan. Spread the cheddar cheese in the bottom. Fill with the apple mixture.

    Roll out the second disc and place on top. Crimp edges and cut vents. Bake for 40-45 minutes until golden. Serve warm with vanilla ice cream.
