Day Before Mashed Potatoes

Make-ahead mashed potatoes with cream cheese, sour cream, and onion powder — refrigerate overnight and bake the next day.

  • 9 whole potatoes, peeled and cubed
  • 6 oz cream cheese
  • 1 cup sour cream
  • 2 tsp onion powder
  • 1 tsp salt
  • 0.3 tsp ground black pepper
  • 2 tbsp butter

Instructions

    Boil potatoes in salted water until tender but still firm, about 15 minutes. Drain.

    Transfer to a large bowl and mash until smooth.

    Mix in cream cheese, sour cream, onion powder, salt, pepper, and butter.

    Cover and refrigerate 8 hours or overnight.

    Preheat oven to 350°F. Spread potato mixture into a lightly greased medium baking dish. Bake about 30 minutes.
