Croquignoles

A traditional Louisiana Mardi Gras pastry — diamond-shaped fried dough flavored with nutmeg, cinnamon, and vanilla, dusted generously with powdered sugar.

  • 3 cup flour
  • 1 tbsp baking powder
  • 0.5 tsp grated nutmeg
  • 0.5 tsp ground cinnamon
  • 0.5 tsp salt
  • 3 each eggs
  • 0.5 cup sugar
  • 2 tbsp butter, melted
  • 1 tbsp pure vanilla extract
  • 4 cup oil, for frying
  • 1 cup confectioners' sugar, for dusting

    Combine flour, baking powder, nutmeg, cinnamon, and salt in a bowl.

    In another bowl, beat eggs until light and frothy. Add sugar and whisk to dissolve. Add butter and vanilla and continue whisking 2-3 minutes.

    Add flour mixture about 1 cup at a time, blending until a stiff dough forms.

    Lightly flour a work surface. Pat dough into a large rectangle, about 1/8-inch thick. Using a pastry wheel or sharp knife, cut about 12 diamond-shaped pieces. Make a slit lengthwise through the center of each diamond.

    Preheat fryer. Deep-fry diamonds 2-3 at a time, turning with a slotted spoon, until golden brown and crispy, about 4 minutes. Drain on paper towels. Dust generously with confectioners' sugar and serve immediately.
