Croque Madame

A Blackstone griddle recipe for Croque Madame.

  • butter
  • flour
  • 2/3 cup milk
  • thick cut bread
  • black forest ham
  • gruyere cheese
  • Salt and black pepper
  • eggs

    In a small saucepan over medium heat, melt one tablespoon of butter and add the flour. Whisk until just browned and add the milk. Stir until the sauce has thickened. Remove from heat and

    season with salt and pepper. Heat your griddle to medium heat. Butter one side of each slice of bread and add a generous amount of the bechamel sauce to the other side. Place two slices of ham on top of each sandwich and top with the other slice of bread. Place on the griddle and cook until golden brown. Flip the sandwiches and top with the gruyere cheese. On the other side of the griddle, crack the eggs and cook until the whites are firm. Cook until the other side of the sandwich is golden brown and the gruyere has melted on top. Top each sandwich with a fried egg before serving.
