Creamy Pralines

Classic New Orleans candy — a creamy soft-ball stage praline with toasted pecans, brown sugar, and a touch of condensed milk, dropped onto waxed paper.

  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 tbsp light corn syrup
  • 2 tbsp butter
  • 1 pinch salt
  • 0.5 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 1 0.5 cup pecan pieces

Instructions

    In a heavy saucepan over medium heat, combine sugar, brown sugar, corn syrup, butter, salt, and condensed milk. Stir with a wooden spoon until sugar dissolves.

    Continue to cook, stirring, until smooth and light brown, about 8 minutes.

    Add vanilla and pecans and continue to cook, stirring, until mixture reaches 234-240°F (soft ball stage).

    Remove from heat and drop by the spoonful onto waxed paper. Let cool.

    Remove from paper with a thin knife. Yields about 1 1/2 dozen pralines.
