Creamy Pasta with Sausage and Mushrooms

- 1 lb farfalle pasta
- 2 tbsp olive oil
- 1 lb sweet Italian sausage, removed from casing and crumbled
- 2 clove garlic, minced
- 8 oz button or wild mushrooms, sliced
- 1 cup dry white wine
- 0.8 cup heavy cream
- 0.5 tsp red pepper flakes
- 1 0.5 tsp kosher salt
- 0.5 tsp freshly ground black pepper
- 0.3 cup fresh parsley, finely chopped
- 0.5 cup Parmesan cheese, grated

Cook pasta al dente per package instructions. Reserve 1 cup pasta water before draining.

Heat olive oil in a large sauté pan over medium-high heat. Add sausage and cook until browned, 10-12 minutes.

Add garlic and cook 1 minute. Add mushrooms and cook 5 minutes, stirring frequently.

Add white wine and cook until reduced by half, about 5 minutes.

Add cream and ½ cup reserved pasta water. Stir in red pepper flakes, salt, pepper, and parsley. Simmer until slightly thickened.

Add drained pasta and toss to coat, adding more pasta water if needed. Serve topped with Parmesan.
