  • 2 cup flour
  • 1 cup sugar
  • 1 tsp baking powder 2 tablespoons melted butter
  • ½ teaspoon soda water
  • ½ teaspoon salt 1 egg, well beaten
  • zest and juice of 1 orange or 2 tablespoons 1 cup sliced raw cranberries

Instructions

    Preheat oven to 350F/180C.

    Generously grease and lightly flour one or two 9-inch x 5-inch loaf pan(s) or 3 mini loaf pans.

    Soak dried cranberries in very warm water for 10 minutes, then drain and pat dry before using.

  4. 4

    Sprinkle a little sugar on top just before baking for a beautiful glisten.

    Let cool before slicing.
