Crab Meat Deviled Eggs
Elegant deviled eggs filled with lump crab meat, capers, and garlic mayonnaise, garnished with caviar.

- 12 hard-boiled eggs, shelled and halved
- 0.3 cup mayonnaise
- 0.5 lb lump crab meat, picked over
- 1 tsp minced garlic
- 1 tbsp minced capers
- 2 tbsp caper juice
- 0 to taste salt and freshly ground white pepper
- 2 oz caviar for garnish
Instructions

Remove the yolks from the whites and place in a mixing bowl. Using the back of a fork, break the yolks into small pieces.

Add the mayonnaise, crab meat, garlic, capers and caper juice. Mix well. Season with salt and white pepper.

Spoon the mixture into the white halves. Chill the eggs completely.

Garnish each egg with a small amount of caviar before serving.
