Crab Au Gratin

  • 1 stick butter, divided
  • 0.5 cup minced onion
  • 2 tbsp all-purpose flour
  • 1 cup milk, scalded
  • 0.5 tsp salt
  • 1/8 tsp white pepper
  • 0.3 cup dry sherry
  • 12 oz crab meat, picked over
  • 1 cup crackers, finely crumbled
  • 0.5 cup grated Cheddar cheese

Instructions

    Preheat oven to 350°F (175°C). Lightly grease a baking dish.

    Melt 4 tbsp butter in a heavy skillet. Sauté onion 5 minutes until golden.

    Stir in flour over low heat until blended. Gradually whisk in hot milk; stir until sauce thickens.

    Add salt, pepper, and sherry; continue stirring. Remove from heat.

    Mix crab meat, cream sauce, and most of the cracker crumbs and cheese (reserving some for topping). Pour into prepared dish.

    Sprinkle reserved cracker crumbs and cheese over top. Dot with remaining 4 tbsp butter.

    Bake uncovered 15 minutes until golden and bubbly.
