Country Style Potato Soup
A simple, hearty country-style potato soup simmered with onion, then finished with milk and parsley, topped with shredded cheddar.

- 4 potatoes, peeled and thinly sliced
- 1 cup thinly sliced onions
- 1 tsp celery salt
- 0.5 tsp salt
- 0.3 tsp pepper
- 2 cup boiling water
- 2 cup milk
- 0.3 cup chopped parsley
- 6 tbsp shredded old cheddar cheese, for topping

Cut 4 peeled potatoes lengthwise into quarters, then slice thinly — approximately 4 cups.

Place in a large saucepan with onions, celery salt, salt, pepper, and boiling water.

Bring to a boil. Cover and simmer 30 minutes or until vegetables are tender.

Add milk and chopped parsley. Cover and simmer 10 minutes longer. Season to taste.

Sprinkle each serving with 1 tablespoon shredded old cheddar cheese.
