Country Sausage and Sage Dressing

- 2 count baguettes, stale, cut into 1-inch cubes
- 1 tbsp vegetable oil
- 1 lb country pork sausage
- 1 count large onion, cut in 3/4-inch dice
- 5 count stalks celery, sliced in large dice
- 2 count medium apples, peeled, cored, cut in large dice
- 0.3 cup fresh Italian parsley, coarsely chopped
- 0.3 cup fresh sage leaves, coarsely chopped
- 4 count eggs
- 2 cup turkey or chicken stock
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 6 tbsp unsalted butter

If bread is not fully stale, spread cubes on a baking sheet and dry in a 250 degree F oven for about 1 hour.

Heat vegetable oil in a large skillet. Brown the sausage meat, breaking it into quarter-sized pieces. Transfer to a large bowl using a slotted spoon.

Add onion and celery to the skillet. Cook 1 minute, then add apples and cook 2 more minutes. Transfer to the bowl with the sausage.

Add bread cubes, parsley, and sage to the bowl.

In a separate bowl, whisk together eggs, stock, salt, and pepper. Pour over the bread mixture and toss to combine.

Melt butter and drizzle over the dressing. Mix well.

Bake in a buttered casserole dish at 350 degrees F for 30 to 35 minutes until golden on top.
