Country Ham Red Eyed Gravy Grits

- 8 oz Country ham slices
- 2 cup Chicken stock
- 1 cup Heavy cream
- 0.5 cup Grits
- 3 tbsp Butter
- 0.5 cup Shredded cheddar cheese
- 1 cup Coffee
- 2 tbsp Brown sugar
- 1 tbsp Cornstarch
- 0.5 cup Water
Instructions

Pan-fry country ham until edges are crispy.

Remove ham and drain grease, leaving about 2 tablespoons in pan.

Add brown sugar and cook for 1 minute.

Pour in coffee and scrape up browned bits.

Mix cornstarch with water and add to gravy.

Simmer until thickened.

For grits, bring stock and cream to boil.

Whisk in grits and stir constantly.

Reduce heat and cook for 20 minutes.
