Country Ham And Cheese Biscuits
Flaky Southern biscuits loaded with country ham and white cheddar cheese, baked golden and served with scrambled eggs.
Ingredients
- 1 cup plus 1 tsp vegetable shortening
- 4 cup plus 2 tbsp all-purpose flour
- 1 0.5 tbsp baking powder
- 1/8 tsp freshly ground black pepper
- 1 tsp salt
- 4 oz country ham, small diced
- 1 cup grated white cheddar cheese
- 2 cup milk
- 10 large eggs
- 2 tbsp butter

Preheat oven to 400 degrees F. Grease a baking sheet with 1 tsp shortening.

In a large mixing bowl, combine 4 cups flour, baking powder, pepper, salt, ham and cheese. Mix well. Add the remaining shortening and work it in with your hands until the mixture resembles coarse crumbs. Fold in 1.5 cups of the milk. The dough will be sticky.

Dust your work surface with 1 tablespoon flour. Turn the dough onto the floured surface and gently fold each side towards the center. Dust again with remaining tablespoon of flour and fold again. Turn over and press to 1 inch thickness.

Cut biscuits using a 2.25-inch round cookie cutter. Place on the baking sheet and bake until golden, about 30 minutes.

Meanwhile, whisk the eggs and remaining milk together. Season with salt and pepper. In a non-stick pan over medium heat, melt butter and scramble the eggs to desired doneness.

Serve the warm biscuits alongside the scrambled eggs.
