Country Fried Steak With White Gravy
Ingredients
- 1 cup vegetable oil for frying
- 1 lb round steak, cut into 4 pieces (4 oz each)
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 1 each egg, beaten
- 3 cup whole milk, plus 3 tablespoons
- 1 0.5 cup all-purpose flour, plus 3 tablespoons

Heat the oil in a heavy 9-inch cast iron skillet to 360°F (182°C). Using a meat mallet, pound out the steaks until thin. Season with salt and pepper.

Mix the egg with 3 tablespoons milk. Put 1½ cups flour in a shallow pan and season with salt and pepper. Dredge the steaks in flour, dip in the egg wash, then dredge again in flour. Shake off excess.

Fry the steaks in the hot oil until golden brown on each side, about 3 minutes per side. Drain on paper towels. Season with salt and pepper.

Pour off the oil, leaving about 1/4 cup and the brown bits in the pan. Over medium heat, add the remaining 3 tablespoons flour. Cook for 3 to 4 minutes, whisking constantly.

Add the remaining 3 cups milk, 1/2 cup at a time, whisking constantly. Bring to a boil, reduce to medium-low. Season generously with salt and pepper. Cook for 8 to 10 minutes until thick.

Serve the fried steaks smothered with the white gravy.
