Country Fried Steak and Gravy

- 1 lb cubed steak, cut into 4 pieces
- 1 cup vegetable oil
- 1 0.5 cup all-purpose flour, divided
- 1 egg, beaten
- 3 cup milk, divided
- 1 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp poultry seasoning
Instructions

Heat oil in a heavy cast iron skillet to 360°F.

Season steak with salt, pepper, and poultry seasoning. Combine egg with 3 tbsp milk.

Put 1.5 cups flour in a bag and season. Dredge steaks in flour, dip in egg wash, dredge in flour again.

Fry steaks in hot oil until golden brown on each side, about 3 minutes per side. Drain on paper towels.

Carefully pour off oil, leaving about 1/4 cup along with brown bits.

Reduce heat to medium, add 3 tbsp flour and cook 3-4 minutes, whisking constantly.

Add remaining 3 cups milk 1/2 cup at a time, whisking constantly. Bring to boil, reduce heat, season and serve over steaks.
