Country Baked Chicken

A Carolina mountain recipe for Country Baked Chicken.

  • 2 cut up broilers or frying chickens
  • 6 medium potatoes, peeled and cubed
  • 1/2 pound of sliced bacon
  • 2 large onions, peeled and chopped
  • 6 large carrots, scraped and cubed

Instructions

    Brown the chicken parts on all sides in a large heavy pot.

    Layer the potatoes, carrots, and the chopped onions on top of the chicken.

    Lay the bacon strips close together on top of the vegetables.

    Cover pot and bake at 350 degrees for 1 hour and 15 minutes.

    Remove the lid from the pot and bake to an additional 15 minutes or until the bacon is browned.
