Cornbread Taco Bake

- 1 0.5 lb ground beef
- 1 packet taco seasoning mix
- 0.5 cup water
- 12 oz canned whole kernel corn, drained
- 0.5 cup chopped green bell pepper
- 8 oz tomato sauce
- 8 0.5 oz corn muffin mix
- 0.3 cup shredded Cheddar cheese
- 2 0.8 oz French fried onions, divided

Preheat oven to 400°F.

Brown ground beef in skillet; drain. Stir in taco seasoning, water, corn, green pepper, and tomato sauce. Pour into a greased 2-quart casserole.

Prepare corn muffin mix according to directions, but add half the French fried onions to the batter.

Spoon cornbread mixture around the outer edge of the casserole.

Bake uncovered at 400°F for 20 minutes.

Top cornbread with cheese and remaining onions; bake 2 to 3 minutes longer.
