Cornbread Fried Oysters

Freshly shucked oysters deep-fried in a golden cornmeal batter — best served with lemon wedges.

  • 1 0.5 cup yellow cornmeal
  • 0.5 cup all-purpose flour
  • 2 whole eggs, lightly beaten
  • 2 cup milk
  • 0.3 cup melted bacon fat or butter
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 3 cup peanut oil for deep-frying
  • 36 whole freshly shucked oysters
  • 2 whole lemons, cut in wedges

Instructions

    In a medium bowl, combine cornmeal, flour, eggs, milk, bacon fat, baking powder, and salt. Stir until batter is smooth.

    In a large saucepan or deep-fryer, heat oil to 375°F.

    Dredge each oyster in the cornmeal batter and fry in batches until golden brown, about 1 minute.

    Remove with a slotted spoon and drain on paper towels. Serve with lemon wedges.
