Corn Bread Fried Oysters

- 1 0.5 cup yellow cornmeal
- 0.5 cup all-purpose flour
- 2 large eggs, lightly beaten
- 2 cup milk
- 0.3 cup melted bacon fat or butter
- 1 tbsp baking powder
- 0.5 tsp salt
- 3 cup peanut oil, for deep-frying
- 36 oysters freshly shucked oysters
- 2 lemons cut in wedges, for serving

In a medium bowl, combine cornmeal, flour, eggs, milk, bacon fat, baking powder, and salt. Stir until batter is smooth.

In a large saucepan or deep-fryer, heat peanut oil to 375°F (190°C).

Dredge each oyster in the cornmeal batter and fry in batches until golden brown, about 1 minute per batch.

Remove with a slotted spoon and drain on paper towels. Serve immediately with lemon wedges.
