Corn Fritters

  • 2 cup all-purpose flour
  • 2 count eggs, beaten
  • 1 tbsp baking powder
  • 1 cup milk
  • 0.5 tsp salt
  • 0.3 cup butter, softened
  • 4 tbsp sugar
  • 1 cup whole kernel corn, drained
  • 1 cup vegetable oil for frying
  • 2 tbsp confectioners' sugar for serving

Instructions

    Sift together flour, baking powder, salt, and sugar in a large bowl.

    In a separate bowl, combine beaten eggs, milk, and softened butter. Blend well.

    Fold the wet ingredients into the dry ingredients until just combined. Stir in the corn.

    Heat deep fryer or a deep pot of oil to 350 degrees F.

    Drop batter by tablespoonfuls into the hot oil. Deep fry about 5 minutes until golden brown, turning once.

    Drain on paper towels. Sprinkle with confectioners' sugar and serve warm.
