Corn Bread Salad

Southern-style salad of crumbled cornbread, crumbled bacon, tomatoes, and onion gently folded together with mayonnaise — better the next day.

  • 1 pan cornbread, cooled and crumbled
  • 8 slice bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 2 large tomatoes, chopped
  • 2 eggs, hard-boiled and chopped (optional)
  • 1 green pepper, chopped (optional)
  • 1 cup mayonnaise

Instructions

    Crumble cornbread into a large bowl. Add bacon and onion.

    If desired, add hard-boiled eggs and green pepper.

  3. 3

    Add tomatoes and mayonnaise last; stir gently.

  4. 4

    Chill until served. Even better the next day.
