Corn And Goat Cheese Queso
A warm, creamy queso dip made from fresh corn sautéed with onions, jalapeño, and garlic, melted together with goat's cheese and heavy cream.

- 2 tbsp butter
- 0.5 cup minced onions
- 3 cup fresh corn kernels (about 6 ears)
- 1 tbsp chopped garlic
- 1 each jalapeño, stemmed, seeded, and chopped
- 8 oz goat's cheese
- 0.3 cup heavy cream (up to 1/2 cup)

In a saucepan over medium heat, melt the butter. Add onions and sauté 2 minutes. Season with salt and pepper.

Add corn and sauté 10-12 minutes until tender and lightly golden.

Stir in garlic, jalapeño, goat's cheese, and cream. Cook for 2 minutes, stirring until smooth.

Season with salt and pepper. Serve warm as a dip or alongside grilled meats. Yields about 2.5 cups.
