- 4 cups strawberries
- 2 cups rhubarb, chopped
- 1 cup sugar
- 2 packages unflavored gelatin
- 2 egg yolks
- 1 cup light cream
- 2 tsp. vanilla
- 1 tsp. grated lemon rind
- 1/2 lb. cream cheese
- 2 egg whites
- 1/2 tsp. lemon juice

Set aside half the strawberries for garnish.

In small saucepan, crush remaining berries.

Add rhubarb.

Bring to slow simmer over medium for 6 to 7 minutes or until rhubarb is tender.

In mixing bowl, combine half the sugar with 1 envelope gelatin.

Sprinkle over hot fruit mixture.

Stir until dissolved.

Chill, stirring occasionally until mixture is partially set (about 30 minutes).
