  • 1 each onion, chopped
  • 3 cup Okra, rinsed, trimmed and sliced
  • 2 cup Fresh corn (cut from cob)
  • 4 each ripe tomatoes, peeled and chopped
  • 2 tsp Butter
  • 1 tsp Olive oil
  • 0.5 tsp Salt
  • 0.3 tsp Freshly ground black pepper
  • 4 slice of crisp bacon, crumbled

Instructions

    Melt butter in large skillet over medium heat; add the olive oil.

    Add the onion and saut for a few minutes; then add the okra, corn, tomatoes, salt and pepper.

    Stir and cover.

    Lower heat and simmer for 15 minutes, stirring occasionally.

    Before serving, sprinkle with crumbled bacon.

    Makes about 6 or 8 servings.
