Company Shrimp and Rice Casserole

  • 0.5 cup chopped celery
  • 0.5 cup chopped green bell pepper
  • 2 tbsp butter
  • 2 cup cooked white rice
  • 1 0.5 lb cooked shrimp, peeled and cleaned
  • 2 can cream of shrimp soup (10.5 oz each)
  • 0.3 cup sliced almonds, toasted
  • 0.3 cup dry sherry
  • 0.3 tsp paprika

Instructions

    Preheat oven to 350°F (175°C). Grease a 2-quart baking dish.

    Sauté celery and green pepper in butter over medium heat until softened, about 5 minutes.

    In a large bowl, combine sautéed vegetables, cooked rice, shrimp, cream of shrimp soup, toasted almonds, and sherry. Mix well.

    Transfer to prepared baking dish. Sprinkle paprika over the top.

    Bake 20–30 minutes until heated through and bubbly.
