Company Chicken Rice Casserole

  • 1 0.3 cup raw converted rice
  • 0.5 cup butter, melted
  • 2 0.5 cup chicken broth
  • 3 cup cooked chicken, cut up
  • 2 cans (4 oz each) sliced mushrooms, drained
  • 6 tbsp soy sauce
  • 8 count green onions, chopped, divided
  • 0.7 cup slivered almonds, divided

Instructions

    Mix raw rice with melted butter in the slow cooker; stir to coat rice thoroughly.

    Add chicken broth, cooked chicken, mushrooms, soy sauce, and most of the green onions (reserving 2 tablespoons for garnish).

    Stir to combine. Sprinkle most of the almonds (reserving 2 tablespoons) over the top.

    Cover and cook on LOW 7–9 hours, or HIGH 3–4 hours, until rice has absorbed all the liquid.

    Garnish with reserved green onions and almonds. Serve hot.
