Cold Soba Salad

Chilled Japanese buckwheat noodle salad.

  • 8 oz Soba noodles
  • 2 cup Cucumber, julienned
  • 1 cup Grated carrots
  • 0.5 cup Edamame
  • 4 each Eggs, boiled and halved
  • 4 tbsp Soy sauce
  • 2 tbsp Rice vinegar
  • 1 tbsp Sesame oil
  • 2 tsp Wasabi
  • 1 tbsp Sesame seeds
  • 2 tbsp Nori seaweed, sliced

Instructions

    Cook soba noodles according to package directions.

    Drain and rinse with cold water.

    Cool completely.

    Arrange noodles on serving platter.

    Top with cucumber, carrots, edamame, and eggs.

    In a small bowl, whisk together soy sauce, vinegar, sesame oil, and wasabi.

    Pour dressing over salad.

    Garnish with sesame seeds and nori.

    Serve chilled.
