- 3 lb chicken wings
- 1 carrot, peeled and halved
- 1 onion, peeled and halved
- 1 cinnamon stick
- 1 3-inch piece fresh ginger, peeled
- 1 0.5 tsp salt
- 1 Seville orange (zest in strips + juice, about ¼ cup)
- 3 quart water
- 2 tbsp fresh cilantro, chopped (for garnish)
- 1 small red chili pepper, seeded and sliced (for garnish)

Combine chicken, carrot, onion, cinnamon, ginger, salt, water, orange zest, and orange juice in a large saucepan. Bring to a boil.

Reduce heat and simmer uncovered until liquid has reduced to about half and the broth is very flavorful, 1½–2 hours.

Pour through a fine-mesh strainer into a bowl; discard solids.

Allow broth to cool, then refrigerate overnight.

Remove solidified fat from the surface. Warm soup, ladle into mugs or bowls, and garnish with cilantro and chili rings.
