Colaradito Red Oaxacan Mole
Traditional Oaxacan red mole sauce.

- 6 each Ancho chiles
- 4 each Guajillo chiles
- 2 each Chipotle chiles
- 1 cup Tomatoes
- 0.5 cup Almonds
- 0.3 cup Raisins
- 2 tbsp Sesame seeds
- 1 tbsp Cinnamon
- 4 clove Garlic
- 1 onion Chopped
- 4 cup Chicken stock
- 2 tbsp Lard or oil
Instructions

Remove stems and seeds from chiles.

Toast chiles in a dry skillet for 30 seconds.

Soak chiles in hot water for 20 minutes.

Drain and blend with tomatoes, almonds, raisins, sesame seeds, cinnamon, garlic, and onion.

Heat lard and sauté chile mixture for 5 minutes.

Add stock and simmer for 1 hour.

Strain if desired for smoother sauce.

Serve over chicken.
