  • 2 1/2 cups of all-purpose flour
  • 1 1/2 teaspoons of baking powder
  • 1 1/2 teaspoons of ground cinnamon
  • 3/4 teaspoon of baking soda
  • 1/4 teaspoon of ground cloves
  • 1/4 teaspoon of nutmeg
  • 1/4 teaspoon of allspice
  • 1/8 teaspoon of ground ginger
  • 1/2 cup of butter
  • 1/2 cup of granulated sugar
  • 1/2 cup of firmly packed brown sugar
  • 1 teaspoon of vanilla
  • 4 eggs
  • 1 1/4 cups of light cream
  • 1/4 cup of molasses
  • 1 1/4 cup of shredded coconut
  • 2/3 cup of orange marmalade
  • 1 3oz. package of cream cheese
  • 6 tablespoons of butter
  • 2 cups of sifted powdered sugar
  • A few drops of orange extract

Instructions

    Grease and flour 3 round cake pans.

    Combine the first 8 ingredients and 1/2 teaspoon of salt in a bowl and mix well.

    In another large bowl, beat 1/2 cup of butter for 30 seconds.

    Mix in the granulated and brown sugars and the vanilla.

    Add the eggs, beating for 1 minute after each egg is added.

    In another bowl, combine the cream and molasses.

    Add the dry ingredients and the molasses mixture alternately to the egg mixture, beating well after each addition.

    Stir in the coconut and pour the batter into the greased and floured cake pans.

    Bake at 350 degrees for 20 minutes.

    Allow the cakes to cool for 10 minutes and remove them from the pans.

    Allow the cakes to cool completely and stack the layers spreading the orange marmalade between the layers.

    For the frosting, beat together the cream cheese and the remaining butter.

    Next, mix in the powdered sugar and a few drops of the orange extract.

    After frosting the cake sprinkle with toasted coconut if desired and chill.
