Coconut Pudding

A lush baked coconut pudding of grated fresh coconut, bread crumbs, eggs, brown sugar, rum, and coconut milk, topped with a golden meringue and baked until crisp.

  • 4 each egg yolks
  • 0.5 cup brown sugar
  • 1 pinch fresh grated nutmeg
  • 1 tbsp pure vanilla extract
  • 2 tbsp Mount Gay Rum
  • 1 cup milk
  • 1 cup coconut milk
  • 5 tbsp butter, melted
  • 2 cup grated fresh coconut
  • 2 cup fresh bread crumbs
  • 4 each egg whites, whipped to stiff peaks with sugar

Instructions

    Preheat oven to 350°F. Grease a large oven-proof baking dish.

    In a mixing bowl, whisk eggs, brown sugar, nutmeg, vanilla, and rum. Whisk in milk and coconut milk.

    Add butter, fresh coconut, and bread crumbs. Whisk well.

    Pour into the prepared pan. Bake for 1 hour.

    Remove and cool for 10 minutes. Increase temperature to 450°F.

    Spread the meringue over the top of the pudding evenly. Return to oven for a couple minutes until golden brown.
