Coconut Fried Shrimp

- 1 lb small raw shrimp, shelled and deveined
- 0.3 cup fresh lemon juice
- 0.5 tsp salt
- 0.3 tsp ground ginger
- 3 tsp curry powder
- 1 0.8 cup all-purpose flour
- 2 tsp baking powder
- 1 0.3 cup skimmed milk
- 0.5 cup cream of coconut
- 3 0.5 oz sweetened flaked coconut
- 4 cup vegetable oil, for deep frying

In a bowl, combine the shrimp with the lemon juice, salt, ginger, and curry powder. Marinate for 1 to 2 hours. Drain well.

In a mixing bowl, whisk together 1½ cups of the flour, baking powder, milk, and cream of coconut to form a smooth batter.

Place the remaining ¼ cup flour in one shallow dish and the flaked coconut in another.

Preheat the oil to 350°F in a deep pan.

Coat each marinated shrimp in flour, dip in the batter, then press into the coconut to coat.

Fry the shrimp in batches of about 6 at a time for 2 to 3 minutes until golden brown. Drain on paper towels and serve hot with dipping sauce.
