Coca-Cola Shipwreck Casserole

A vintage layered casserole of ground beef, raw rice, celery, green pepper, sliced potatoes, and kidney beans, all moistened with tomato soup and a can of Coca-Cola.

  • 1 0.5 tbsp oil
  • 1 large onion, sliced
  • 1 lb ground beef
  • 0.3 cup raw rice, uncooked
  • 2 stalks celery, chopped
  • 1 medium green bell pepper, chopped
  • 3 medium potatoes, sliced
  • 1 can kidney beans, drained (15 oz)
  • 1 can tomato soup
  • 1 can Coca-Cola (12 oz)

Instructions

    Preheat oven to 350°F. Spread oil in the bottom of a 9x13-inch casserole dish.

    Layer the ingredients in order: onion, raw ground beef, rice, celery, bell pepper, potato slices, and kidney beans.

    Season each layer with salt and pepper as you go.

    Mix tomato soup with Coca-Cola and pour evenly over the entire casserole.

    Cover tightly with foil and bake at 350°F for 1 hour until potatoes are tender and rice is cooked.
