- 4 ripe tomatoes
- 1 can artichoke hearts
- 1 cup Mozzarella cheese, cubed
- 0.5 sweet green pepper, diced
- 1 green onion, chopped
- 0.5 cup fresh basil, chopped coarsely
- 1/3 cup black olives, chopped
- 1/3 cup lemon juice
Instructions

salt and fresh ground pepper to taste Core tomatoes, chop into chunks. Drain artichokes, quarter. Combine tomatoes, artichoke hearts, mozzarella, peppers, basil, olives and onion. Drizzle with oil and lemon juice and toss. Season with salt and pepper to taste. Serve with chilled white Zinfandel wine.
