Classic Reuben Sandwich

Classic deli Reuben sandwich — corned beef with well-drained sauerkraut and Swiss cheese on buttered rye bread with Thousand Island dressing, grilled until golden.

  • 8 slice rye bread with caraway seeds
  • 0.3 cup butter, room temperature
  • 1 cup Thousand Island dressing
  • 0.3 lb corned beef, thinly sliced
  • 1 cup sauerkraut, well drained
  • 0.5 lb Swiss cheese, shredded

Instructions

    Spread one side of each bread slice with butter, then turn and spread other side with Thousand Island dressing.

    Lay sliced corned beef on the dressing side of 4 slices of bread.

    Spread sauerkraut evenly on the corned beef, then sprinkle Swiss cheese on top.

    Top with remaining bread slices, buttered side out. Press to compact.

    Heat a large non-stick skillet or griddle until hot. Grill sandwiches until golden brown on both sides and cheese is melted.

    Cut diagonally and serve immediately.
