Classic Denver Omelet

- 6 large eggs
- 1/4 cup country ham, diced
- 1/4 cup yellow onion, finely chopped
- 1/4 cup green bell pepper, chopped
- 2/3 cup cheddar cheese, shredded
- 1/4 teaspoon cayenne pepper
- salt and black pepper
- 2 tablespoons butter

Heat your griddle to medium heat and place the butter onto the griddle.

Add the ham, onion, and pepper to the butter and cook until the vegetables have just softened.

Beat the eggs in a large bowl and add a pinch of salt and the cayenne pepper.

Split the vegetables into two portions on the griddle and add half of the eggs to each portion. Cook until the eggs have begun to firm up, and then add the cheese to each omelet.

Fold the omelets over and remove from the griddle. Serve immediately.
