Classic Buttermilk Pancakes

- 2 cups all purpose flour
- 3 tablespoons sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 1/4 teaspoons salt
- 2 1/2 cups buttermilk
- 2 eggs
- 3 tablespoons unsalted butter, melted
- vegetable oil
Instructions

In a large bowl, combine the flour, sugar, baking soda, baking powder, and salt.

Stir in the buttermilk, eggs, and butter, and mix until combined but not totally smooth.

Heat your griddle to medium heat and add a small amount of oil.

Using a paper towel, spread the oil over the griddle in a very thin layer.

Use a ladle to pour the batter onto the griddle allowing a few inches between pancakes.

When the surface of the pancakes is bubbly, flip and cook a few additional minutes.

Remove the pancakes from the griddle and serve immediately with butter and maple syrup.
