  • 24 count Cherrystone clams
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 0.5 cup onion, finely minced
  • 0.3 cup green bell pepper, finely minced
  • 2 clove garlic, minced
  • 1 cup fresh breadcrumbs
  • 4 strips bacon, cooked crisp and crumbled
  • 0.5 tsp dried oregano
  • 2 tbsp Parmesan cheese, grated
  • 0.3 cup fresh parsley, finely chopped
  • 1 tsp paprika
  • 1 tbsp olive oil (for drizzling)

Instructions

    Preheat oven to 450°F (230°C). Scrub clams well; discard any open ones.

    Place clams on a baking sheet; bake until shells open. Discard any that don't open.

    Remove clam meat and chop finely. Discard half the shells, keeping the best half-shells.

    Sauté onion, bell pepper, and garlic in olive oil and butter until soft. Remove from heat; cool slightly.

    Add breadcrumbs, crumbled bacon, oregano, Parmesan, and chopped clam meat; mix well.

    Fill each reserved shell with clam mixture. Sprinkle with parsley and paprika; drizzle with olive oil.

    Bake at 450°F for 7 minutes until lightly browned. Serve immediately.
