Citrus Salmon
Salmon fillets microwaved in a sweet-tangy orange juice, lemon, and brown sugar glaze.

- 1 lb salmon fillets
- 1 tbsp cornstarch
- 1 tbsp water
- 2 tbsp undiluted frozen orange juice concentrate
- 1 tbsp lemon juice
- 0.3 cup brown sugar
- 1 tsp salt, to taste
- 0.5 tsp pepper, to taste

Sprinkle both sides of salmon with salt and pepper.

Mix cornstarch and water into a paste. Add orange juice concentrate, lemon juice, and brown sugar; stir until dissolved.

Pour half the sauce into a microwaveable dish. Place salmon on top; pour remaining sauce over.

Cover with plastic wrap, venting to allow steam to escape. Microwave on high for 7-10 minutes. Stir remaining sauce and pour over fillet. Garnish with orange slices if desired.
