Cilantro Shrimp

- 1 medium onion, chopped
- 2 clove garlic, finely chopped
- 2 tbsp butter
- 2 tbsp vegetable oil
- 1 lb large raw shrimp, peeled and deveined
- 2 tbsp fresh cilantro, snipped
- 0.5 lemon lemon, sliced for garnish
Instructions

Cook and stir onion and garlic in butter and oil in a 10-inch skillet over medium heat until tender, about 3 minutes.

Add shrimp and cook for 1 minute without stirring.

Turn shrimp over and cook until pink and just cooked through, about 2 minutes more. Do not overcook.

Serve shrimp over steamed rice. Pour pan juices over shrimp and garnish with lemon slices and cilantro.
