An Umbrian deep-fried carnival dessert — tiny dough balls coated in honey, chocolate, and whole hazelnuts.

  • 3 cup all-purpose flour
  • 4 whole extra large eggs
  • 1 tbsp lemon rind, grated
  • 4 cup vegetable oil for deep frying
  • 1 cup honey
  • 2 cup whole hazelnuts
  • 4 oz semi-sweet chocolate (4 squares)

Instructions

    Place flour in a large bowl, make a well. Add eggs and lemon rind; mix and knead until dough is elastic. Set aside for 30 minutes.

    Take small amounts of dough, roll into long strips, and cut into short lengths to form small balls.

    Deep-fry dough pieces until golden. Drain on paper towels.

    Bring honey to a boil and simmer for 5 minutes. Add chocolate; cook until melted. Remove from heat and add hazelnuts. Coat fried dough balls in honey-chocolate-nut mixture. Pile onto a serving plate and let set.
