Chuck Wagon Dinner
A quick cowboy-style dinner of seasoned ground beef with chili seasoning, tomato sauce, cream of mushroom soup, ranch beans, and green chiles, topped with Cheddar and Fritos.

- 1 lb extra lean ground beef
- 1 small onion, chopped
- 1 packet chili seasoning
- 2 can tomato sauce (8 oz each)
- 1 can evaporated milk (5 oz)
- 1 can diced green chiles (4 oz)
- 1 can cream of mushroom soup
- 1 can ranch-style beans (15 oz)
- 1 cup grated Cheddar cheese
- 15 oz Fritos corn chips

In a large skillet, brown ground beef and onion. Rinse with hot water to remove excess grease and return to skillet.

Add chili seasoning packet and tomato sauce. Bring to a boil, reduce heat, and simmer 5 minutes.

Add milk, green chiles, soup, and beans. Return to a boil, reduce heat, cover, and simmer 10 minutes.

Serve over Fritos corn chips in individual bowls.

Top generously with shredded Cheddar cheese.
